One of the most complicated things for me to learn was how to substitute two essentials: eggs and cheese.
Eggs because who doesn’t enjoy an egg scramble? You need eggs for baking and binding things together…
Or so I thought.
As time went on, I quickly realized that I could still eat what I wanted to as long as I used egg substitutes, and upon using them, it wasn’t… difficult. In fact, sometimes I couldn’t taste a difference at all! And when I did, it was always better than it had been with eggs.
